Ingredients:
-2 large tomatoes
-1 seedless cucumber
-1/2 red onion
-2 T. balsamic vinegar
-2 T. olive oil
-salt & pepper to taste
Directions:
1. Chop up tomatoes, cut cucumber in half and slice, slice your 1/2 red onion very thin, throw everything into a large bowl.
2. Add the vinegar and olive oil. Sprinkle on salt & pepper.
3. Toss everything together and let the salad marinate for about 20 minutes or until you are ready to serve.
Variations:
-use red wine vinegar or even lemon juice in place of balsamic vinegar
-add feta cheese crumbles
-use cherry, grape, plum or heirloom tomatoes
-add olives
-omit red onion
-add fresh basil

The way you made the salad is almost EXACTLY the way my brother-in-law who is from Iraq makes it. He says they would have it pretty much every day.
The other cooking tip I have taken from him….when he grills meat on the grill (almost every night)…he puts 1 onion (cut in half) and 3-4 HUGE whole tomatoes on the edges of the grill with the meat. When done, it all gets served on the platter together. Veggies get a little char, are warm and soft and go great with the meat and cucumber salad!

I always add kalamata olives and feta cheese! Sometimes I dont have red onion so I use scallions or whatever onion relative I have on hand! Otherwise that is exactly how I make it too! Yummy! I may have to make this for lunch…
Oh, another good one is cucumber, red onion (or onion relative), white vinegar, a pinch of sugar and salt and pepper! SOOO good!
I'm going to make this tonight substituting plum tomatoes and adding basil, Parmesan, and a clove of pressed garlic. I can't wait!
