This Week’s Bounty

This week’s Bountiful Basket was huge!  It was by far the heaviest haul we have gotten so far.  Check it out:
-1 head broccoli
-3 tomatoes
-5 ears corn
-1 bunch celery
-60 brussels sprouts
-2 heads iceberg lettuce
-1 pineapple
-1 mini watermelon
-1 cantaloupe
-5 bananas
-1 bag green apples
-8 nectarines
I was excited to get the pineapple, cantaloupe and watermelon in one basket.  I was also excited for the brussels sprouts.  They are really small which makes them perfect for roasting whole.  If you are wondering what to do with your brussels sprouts, just trim off the ends, toss them in olive oil and kosher salt and roast them on a baking sheet at 400 for about 20 minutes.  That’s how we do it!  
I was also discussing the iceberg lettuce with some fellow co-op participants yesterday.  This is the first time we have received iceberg instead of romaine.  Since I never buy iceberg at the store, and I don’t like to use it for salad, we were trying to come up with other ideas.  My friend Brad suggested making a healthier version of the wedge salad.  Usually a wedge salad is one of the worst things nutritionally that you can eat, loaded with fat and sodium.  He suggested making one with balsamic vinaigrette, tomatoes and a little crumbled blue cheese.  The other idea came from my friend Dejah.  She thought it might be fun to make some lettuce wraps like the ones you get at P.F. Chang’s.  I thought both ideas were great!  And much better than a boring iceberg salad.  If anyone has a good lettuce wrap recipe, please share in the comments!

    Yum! kinda bummed I was out of town and not able to get this weeks basket. We make lettuce wraps for dinner a few times a month (my whole family loves them!) We usually use butter lettuce as cup, but it would be a great way to use up iceberg. Since I am not at home I dont have my lettuce wrap recipe handy…but this one is pretty close.
    EXCEPT- I add 1 tbsp minced ginger to the stir-fry mixture. And I use green onions instead of white.
    Then to serve, to make more healthy, instead of the fried maifun noodles we add shredded carrots for crunch and color!

    oh, and if I have it, or it is on sale, I will use ground chicken instead of the breast…it is much easier and faster than having to sit nd finely dice chicken breasts!

    Great idea from Dejah! Those lettuce wraps from PF Chang's are delicious…and I bet they're super easy to make at home.

    They were very easy, I had most of the ingredients on hand already. I made them last night, and they turned out delicious!
