Caprese Avocado Wrap

Last week, I had planned to make caprese salad with dinner, but our schedule changed and the ingredients were still sitting around on Friday afternoon.  I didn’t want them to go to waste, so I put the salad together on a piece of Trader Joe’s whole wheat lavash and wrapped it up as a sandwich.  It was a quick and healthy lunch!  I might just plan to have it like this next time too!
To make your own, grab a handful of basil, a handful of cherry tomatoes sliced in half, some fresh mozzerella, a few slices of avocado, a drizzle of olive oil and a shake of salt and pepper.

Stack it all on your lavash (or whole wheat tortilla) and roll it up.
Easy and delicious!

    I’ve made this as-is and really enjoyed it. I’ve also used a bit of romaine, when I didn’t have fresh basil on-hand & added a drizzle of homemade balsamic dressing in place of the olive oil. Very, very good!! Thank you for sharing.

    Do you make these fresh everyday? or do you pack it the night before. I like to make my lunches in bulk and then just grab them throughout the week and I’m worried about the avocados browning. Thanks!
