This week’s Bountiful Basket photos are courtesy of
Ashbstarr Photography.  If you don’t know Ashley yet, she is an amazing photographer with a natural talent.  She has captured some beautiful photos of our kids and most recently updated my professional photos.  If you live in the Tucson area (or are willing to fly her to your location), you really should schedule a session with her.  I promise you won’t be disappointed!

Beautiful photos! You know where to find my meal plan ;)

I like to keep it simple with squash because I love the flavor of most squashes!

My fave way to cook acorn squash is: cut in half, scrape out seeds, fill cavity with a little butter, brown sugar and sprinkle with cinnamon. Place in baking dish and add 1/2 inch water. Bake at 350 till tender.
Or….half, remove seeds, slice into crescents, place on baking stone or cookie sheet, drizzle with EVOO and season with salt and pepper and roast at 400 till tender and edges are browned. Serve as a side dish with practically any protein.
Kids love the flavor of the first method and the shape of the second method!

I agree with Megan, above, the first method is how I prepared our butternut squash last week.. this week I am trying a new recipe I found online, Moroccan-style stuffed acorn squash.. it sounds and looks delicious… here is the link: http://www.elizadomestica.com/2009/10/07/moroccan-style-stuffed-acorn-squash-recipe/
