Butternut Squash Pizza Recipe

A few weeks ago, my parents ended up with three huge butternut squash in their Bountiful Basket.  They have been trying to use it all since then.  One of the recipes that my dad came up with was a vegetarian butternut squash pizza…then he added sausage.

I tried the recipe tonight with a few changes based on what I could find at the store.  I used Trader Joe’s whole wheat pizza dough.  I also used Trader Joe’s sweet apple chicken sausage because I thought that the maple flavor would compliment the butternut squash.  I couldn’t find fresh thyme, so I substituted 1 tsp. of dried thyme (the usual rule is 1 tsp dried = 1 tbsp fresh).

Thankfully I survived, and the pizza was delicious!  The topping was so plentiful that it probably could have covered two pizzas easily, but we enjoyed the heartiness of our one giant pizza.  I almost didn’t buy the pine nuts because they are so expensive, but they really went well with the other ingredients.  I think they were worth the money.
Joe made his own pizza with red sauce, butternut squash, zucchini, sausage and mozzarella cheese.  Both kids gobbled it up.
We will definitely be making this pizza again.  Thanks for the inspiration Dad!

Dad's Butternut Squash Pizza

Ingredients
  

  • 1 pound pizza dough
  • cornmeal
  • 1 lb. butternut squash- peeled seeded, sliced ¼" thick
  • ½ red onion thinly sliced
  • 1/4 c. pine nuts
  • 4 oz. mushrooms sliced
  • 2 links italian sausage sliced and browned
  • 1 Tbs. fresh thyme leaves
  • ½ t. salt
  • ¼ t. pepper
  • 1 T. olive oil
  • C. grated extra sharp cheddar cheese

Instructions
 

  • Heat oven to 400 degrees. Shape the dough into a large oval and place on a cornmeal dusted baking sheet or pizza stone.
  • Place browned sausage evenly over the pizza dough.
  • In a large bowl, toss the squash, onion, pine nuts, mushrooms, thyme, olive oil, salt and pepper. Scatter over the pizza dough and sprinkle with the cheese.
  • Bake for 25-30 minutes.
