This Week’s Bounty

Potatoes, potatoes and more potatoes!  This week’s Bountiful Basket was supposed to include potatoes and sweet potatoes, but a last-minute substitution left us with over 10 pounds of russets.  If you have ideas on how to use them, please share them here!
This week’s $16.50 conventional basket included:
-9 green apples
-7 green pears
-6 oz container blackberries
-7 bananas
-1 pineapple
-1 lb. green beans
-2 grey squash
-1 head romaine lettuce
-6 tomatoes
-10 lbs. russet potatoes
-2 seedless cucumbers

    Looks delicious! I've heard of Bountiful Basket but never tried it. I live in Vail (AZ) and am going to check it out!

    I'm an Idaho girl so I'll try to throw out a few potato idead for ya…. baked potato topped with chili or broccoli & cheese, meatloaf with roasted potatoes and carrots, baked potato soup, cheesy potatoes aka funeral potatoes (our family favorite but not very healthy!)

    How about a baked potato bar w/ all of the fixin's (sour cream, cheese, tomatoes, bacon, etc.)? Also: twice-baked potatoes make a scrumptious side dish.
