Cranberry Bread Recipe, A Family Favorite

Every Christmas, we whip out the family cookbook and start baking.  I don’t know what it is about our old family recipes, but nothing ever seems to stack up against them.  One of our favorites is cranberry bread.  Not too sweet with a wonderful crunch, it makes for a tasty treat or scrumptious breakfast bread.  My dad baked up a batch for the neighbors this week, so I snapped a photo before it was shipped off.  It may not be the best picture, but I promise you will love this bread.

Cranberry Bread Recipe
Ingredients:
-2 eggs, beat
-2 cups sugar
-4 Tbsp. hot water
-4 Tbsp. oil
-1 tsp. salt
-1 tsp. baking soda
-3 tsp. baking powder
-1 cup orange juice
-4 cups flour
-2 cups cranberries, minced
-1 cup nuts (we always use walnuts)
Directions:
1. Preheat oven to 325 degrees.  Grease and flour 2 loaf pans.  Add sugar, hot water and oil to eggs, mix.
2. Sift together salt, baking soda, baking powder and flour.  Alternately add flour mixture and orange juice to egg mixture until all ingredients are blended.  
3.  Stir in cranberries and nuts.  Pour into loaf pans and bake for 1 hour 10 minutes.

    I am making this today! Looks so yummy! I LOVE cranberry/orange, and then the nuts put it over the top!

    Walnuts and cranberries bread? Definitely my favorite! I might mix w other nuts as well eg. almonds and pecans. Delish!
