How to Make Chia Pudding

Last week, I posted about the health benefits of chia seeds.  I received lots of comments.  Many of you enjoy chia seeds on a regular basis, and many of you have never tried them before.  Ricki from Diet, Dessert and Dogs says that she eats them every single day, many times in pudding form.  I was intrigued by her chia pudding post and decided to make my own.  She suggests using only white chia seeds for a more appealing look, but I only had the grey/white blend to use.
Chia pudding is simple to make and only takes 20 minutes.  Here’s how you do it:

 

Gather your ingredients: chia seeds, liquid (I used unsweetened almond milk), sweetener (I used honey)
Pour chia seeds into a mixing bowl (use 2 Tablespoons per serving)
Measure out your liquid (use 1/2  cup per serving)

 

Pour liquid into chia seeds

 

Mix well so that all of the chia seeds are wet.  Let soak for 20 minutes, stirring every 5 minutes (make sure to stir or it will come out as one giant clump!)

 

Sweeten with honey or eat unsweetened.  You can also add spices,
nuts, fruit, whatever your creative mind can come up with.
Jeff and I enjoyed the pudding.  The texture was similar to tapioca.  The flavor of the chia seeds is a bit nutty but not strong.  Jeff told me that chia pudding is definitely something he could eat on a regular basis for the health benefits.

    I'm so glad you enjoyed it! My most recent version has pureed berries mixed in with the milk (use a bit less milk) and sweetened with stevia. Yum! I never liked tapioca pudding, but I do love chia pudding. 🙂

    I've been reading about chia seed buzz over blogland and I can't wait to find them myself so I can give 'em a try! This chia pudding looks similar to tapioca pudding and I love that stuff!

    I just tried this! I love tapioca but the milk makes me sooo sick that I don't dare eat it. I put cinnamon and honey in it (made with vanilla almond milk). SO GOOD! I can't believe the amount of omega-3 that's in this, either. Ah-mazing. Anyways, I think I found my new breakfast food (will be esp good with fresh fruit in the summer).

    I love chia. Best thing ever. I've been unable to have any for a whole month due to dental surgery, (no seeds) and I really miss them. Can wait til I get the ok to have them again.

    i have chia powder because i cant use the seeds. Can u still make the pudding with the seeds?
