Popcorn Cauliflower – Kids Love It!

Happy St. Patrick’s Day!  Are you wearing your green?  How about eating something green?  We celebrated last night by making cauliflower popcorn with green cauliflower from our Bountiful Basket.  I always love roasting our green cauliflower, but this time I was inspired by my RD friend  Danielle Omar’s photo on Facebook of popcorn cauliflower.   It’s basically the same thing, just in smaller pieces.  But calling it popcorn made…

Yogurt-Lemon Chicken Recipe

How often do you cook and eat meals at home as a family?  Once a week?  More?  Many people I talk to are under the impression that healthy dinners take way too much time to put together and that grabbing fast food or a microwavable meal is just part of a busy family’s life.  If that describes your mindset, I want to challenge you to a new way of thinking.…

Visiting Daddy at the Ballpark

Last week I took the kids to see Jeff at the ballpark for the first time since we moved to Phoenix.  They had a great time!  Joe’s biggest concern was finding out where they store all of the bubble gum.  He kept pointing to different places saying, “maybe they keep the gum in there!”   He enjoyed a piece of Bazooka while watching Daddy throw batting practice. 300 Club Lunge of the Week – Curtsy Lunge

Maple-Dijon Pork Tenderloin

Since our move, I have been trying to get back into the groove of planning and cooking healthy dinners for the family.  Thankfully, we have had beautiful weather and have been able to eat most meals outside.  It seems to put the kids in a better mood during meals which means they have a better attitude towards trying new things and end up eating more!  Score! One of the meals…

Overnight Oats

Meet my newest breakfast obsession, overnight oats.  I wanted to try overnight oats because I don’t like the texture of instant oats, and I want breakfast faster than the time it takes to cook rolled oats.  Overnight oats take 2 minutes to throw together at night and 2 minutes to heat up in the morning (you can even eat them cold if you want to).  You get all of the…
