Simple Tostadas to Make with Your Kids

This week on The Kids Cook Monday, I want to share with you one of our new favorite quick & easy meals.  Tostadas are a simple meatless meal that the kids can help you make, and the ingredients are likely things that you already have on hand.  Plus, they are fun to make, kind of like mini pizzas.  This is our new go-to meal for busy night!

Tostadas
Ingredients:
-corn tortillas
-shredded cheese
-assorted veggies
-1 can vegetarian refried beans
-salsa
Directions:
Step 1: Preheat the oven to 400.  Throw some corn tortillas onto a baking sheet.  No oil is needed.  Bake for 15 minutes or until crispy but not burned, turning once. 
Step 2: Grab whatever veggies you have on hand.  Give them a quick chop and lay them out on a cutting board.

Step 3: Gather remaining ingredients.  Feel free to give the cheese a hug if you want to.  

Step 4: Remove tortillas from oven and let cool for a few minutes.  Heat beans in a microwavable bowl for 1½ minutes.

Step 5: Gather the kiddos for assembly time.  If your kids are young like mine, go ahead and spread the refried beans onto their tostada.  Then the fun begins!

Step 6: Sprinkle cheese and assorted veggies on top.  Everyone makes their own just to their liking.  Encourage the kids to make colorful tostadas.

Step 7: Take a big bite!

We finished ours with a little dessert of yogurt and love.

    My first question was the difference between a taco and a tostada but I guess it's that you don't fold or roll it?
    I give you chopping points, looks good. Go to meals- lemon chicken, pesto on anything, pork tenderloin.
