Impress Dad with a Lamb Filet Dinner

What will you be cooking up on Sunday for the big guy in your house?  Haven’t decided yet?  How about honoring Dad with a sweet and savory lamb sirloin?  This recipe is simple but impressively delicious.  Throw it together with some coconut quinoa and steamed artichokes and you have yourself an impressive dinner!
Preheat oven to 325 degrees.  Rub filets with olive oil, salt and pepper.
Brown all sides in a hot pan.
Grab a good bottle of apple butter (homemade is best if you can find it).
Cover the browned lamb in apple butter.
Rub apple butter so that it coats all sides.  Roast in oven for 25 minutes (until thermometer reads 140 degrees).
Bring it out and cover with a foil tent.  Let sit for 10 minutes before slicing.
Slice and serve!  Dad will be so impressed.

If my husband knew about this meal, he would be going to your house for his Father's meal! This looks most scrumptious, Alysa!

That looks really tasty. I'm always afraid to try lamb at home. Not sure why.
