Simple Summer Salad Idea

Do you ever get to the end of the week and have a drawer full of random vegetables that didn’t get eaten?  That happens to us sometimes.  Either we went overboard at the Farmers Market or our crazy schedule interrupted our weekly meal plan.  

When this happens, I make a simple marinated salad.  It’s easy really, just take your veggies, chop them up into small pieces, toss with oil and vinegar, salt and pepper and a sprinkle of sugar.  Let it sit in the fridge for a few hours or until ready to serve.  Top with shaved parmesan cheese.

Easy!

I love this idea! I usually throw my leftover veggies into an omelet or make a good veggie wrap with some hummus or cheese.

Sometimes I chop mine up and freeze them. Makes it easier for prep work later on.

Great idea! We usually toss leftover veggies into a stir fry or make stock. Summer vegetables are perfect for summer salads though.

Depending on the season: salad or soup, eggs, stir fry, mixed grill, diced/shredded small and added to white or red sauce and pasta, veggie pizza or calzones. Last but not least if they are to far wilted they are added to homemade dog food(equal parts veg, protein, grains with a splash of oil mixed with extra water in a crockpot NO ONIONS toxic to dogs)let nothing go to waste. BTW scraps/peelings(even apple) you have left over are great for dog food, be careful to research the web for foods that are toxic to dogs such as onions and garlic.
