
Today is my mom’s birthday. We celebrated last night with a family dinner at our house. When I started planning the menu, I knew that my dad was grilling steaks and I would be in charge of the rest. Based on my Bountiful Basket haul, I decided to make roasted tomatillo guacamole and crispy roasted potatoes. I put together an olive and cheese plate for pre-meal snacking, and prepped a few veggies to throw on the grill with the steaks.
We were all set! Except for one thing….the birthday cake.
Nothing gets me panicked like the task of baking for a special occasion. I am just NOT a good baker! I love to cook, but baking is messy. And precise. And stressful. I needed a simple recipe, and I knew just where to find it. I headed over to How Sweet It Is and found a recipe for Simple, Moist Chocolate Cake. Thank you Jessica! Now we were all set. All I needed were two pairs of little hands to help.
