Juicing under quarantine

Have I mentioned that we have been sick lately?  First Leila, then me, then Joe, then me again, now Leila again.  This time around the kids are going through 4 full days of fever, and I had pink eye.  All of that means that we are under quarantine.  Up until today, we had at least been able to go out to the backyard to get some fresh air. Sunchoke Chips

Have you ever heard of a sunchoke? They are also called Jerusalem artichokes. They are funny-looking tubers that kind of resemble ginger. Sunchokes are high in iron and a good source of vitamin C. Inspiration hit me last week when a friend mentioned that she thought of me while sipping a smoothie made with raw cacoa powder.  A smoothie with chocolate?  What a wonderful idea! Coming up…

Frittata with mushrooms, bacon, and broccolette

Joe started soccer last week.  Does that make me a soccer mom?  Whatever it means, I know one thing.  Our schedule just got a little busier.  Between soccer practice and spring training right around the corner, I need to have ingredients for quick dinners handy. On the nights when I haven’t planned well enough to get a crock pot meal together, a frittata is one of my go-to meals.  It…
