Golden Beet Slices with Goat Cheese and Walnuts

    I just saw golden beets in the store and thought they looked awesome! Now I have a reason to go back and try them!

    Congrats on the Africa trip! I want to travel out of the country but eating out of the country has me stressed. Have you found any good resources? I have been gluten free for 3 years and still have trouble eating in American small towns. When I visit my in-laws I eat Amy’s frozen meals for most meals.

      Rachel, the only resource I know of so far is Gluten-Free Traveller. It will be an interesting trip for sure, I am really praying that I can stay away from gluten!

    Never had golden beets! Only the regular ole red ones. Adding to my list because these look so good
