Last day of school, and a teacher’s gift that makes a difference

My little man is growing up.  As Jen Hatmaker would say, “Gah.” All of the parents pitched in for a class gift for Joe’s teachers.  At the last minute, I thought of a perfect addition from our family.  I went to the Food for the Hungry website and searched for education gifts.  We donated some school supplies in the names of the teachers. For only $8, each school supplies pack includes pens,…

Purslane Cucumber Seaweed Salad – Recipe Redux Challenge

When I found out that this month’s Recipe ReDux theme was titled “Sea What You’ve Been Missing” I knew I was in trouble.  We were instructed to use little fishes like anchovies, sardines or smelt, OR we could focus on sea vegetables like kelp or seaweed.  Now, you would think that I would I would be pretty good at this kind of challenge since I’ve studied Japanese, traveled to Japan,…

My last few posts have focused on some of the difficulties that come with having celiac disease.  Today I thought it would be a good idea to turn my attention to the delicious side of gluten-free eating.  You already know that I enjoy cooking for my family, and now that my kitchen is safely free of gluten, I can keep the tasty meals coming. The switch to gluten-free cooking hasn’t…

Finishing up

Things are starting to wind down, school is almost over, dance class is done.  Joe is a preschool graduate.  As silly as preschool graduation is, it’s hard to believe that kindergarten is just a few months away.  Summer heat is upon us, there is not a cool breeze to be found.  I’m looking forward to a summer full of swimming, baseball, and Ethiopia. Do you have any big summer plans?
