10 Great Summer Salads

Summer is here and so is the heat! To celebrate, I thought I would round up some of my favorite summer salads to help cool you off.  Most of these are gluten-free friendly.  As far as I can tell, the only substitution you would need to make is to swap out the soy sauce for gluten-free tamari.  Enjoy!

Grilled Sweet Potato Salad with Green Onion, Basil, Thyme, and Feta from Kalyn’s Kitchen

Oh my goodness, so many fabulous ideas on this post! I don’t even know which one to try first. Really interested in the chickpea and cilantro and also the cucumber salad.

I actually just wrote a post recently about a lot of my favorite salad ingredients as well: http://lovelaughlivewell.blogspot.com/2012/05/how-to-enjoy-salad.html

This is such a tasty-looking assortment of salads. I would love to live somewhere that had summer all year, because I’d never get tired of salad!

I love this round up! Especially now that the fresh produce and heat are on.

Here’s a favorite of mine…I sometimes top it with cilantro-lime poached shrimp:

Excellent post. I’ll be referring my clients to this post who are in a rut and looking for salad-spiration. Thanks for sharing! Yum!

  • Deanna @ Teaspoon of Spice June 7, 2012 at 3:26 am

Ooh, love this post! I want to make them all – esp. the chickpea one and your strawberry goat cheese salad. I recently did a Garlic Scape Green Goddess Dressing and used it over a simple Tomato Avocado Salad which is gluten-free.

My daughter Lindsey from Aquarian Media Group and Bent But Not Broken just showed me all of your recipes. I’m so excited to try them. I’ll have Lindsey take pics and put on all of your social sites that I’m not on. Thanks for the inspiration to make new food!
P.S.- We actually met at Ken’s event at Fleming’s but wasn’t sure if you would remember me. Lindsey wasn’t feeling so great that night so she felt bad for not being able to talk more with you.

I do remember meeting you! I hope to be able to make it out to Lindsay’s next event. She is doing great things!
