Time for another leap

I got a call while picking Joe up from school today that Fox News in Phoenix wanted me to come to the studio to do an interview about the FH Bloggers trip to Ethiopia. Gulp. The interview is tomorrow morning at 9:40. Double gulp. To some of you, this might not be a big deal.  Especially you rock star bloggers (you know who you are).  But to me, it’s another…

A Simple Marinated Salad

One of my favorite things to do with fresh summer veggies is to chop them up and throw them together for a simple marinated salad.  Drizzle a little olive oil and vinegar on top, stir in a shake of salt and pepper, and marinate until dinner.  Fresh, simple, beautiful.  The marinated salad. It’s that simple.  Look inside yourself, evaluate your situation, pray, then do what you can. I’m…

Simple No-Cook Summer Meal ::: White Bean Salad

I ate a lot of meat in Ethiopia.  A lot.  Many times it was my only safe gluten-free option.  As tasty as it was, I was more than ready for some fresh fruits and vegetables when I got home.  This week I’ve been devouring bell peppers, tomatoes, carrots, cucumbers, strawberries, apples, and grapes. When I started to think about what I would do for this month’s Recipe ReDux challenge (a…
