Spring Training is over, shorts season is here, and I am not 20 years old anymore. Therefore, it’s time to start working out again.
I don’t have much of a plan except to do something every day. Whether it’s a DVD, a jog around the neighborhood or quick circuit in the living room, I am going to do something.
Because something is always better than nothing.
And I was getting way too good at doing nothing.
On Saturday I popped in my 30-Day Shred DVD and laced up my shoes. Before letting Jillian yell at me through the screen, I put on a pot of boiling water for beets and another pot on for quinoa. By the time I was jelly-legged and red-faced, my lunch was almost finished. I tossed one of the golden beets with quinoa, beet greens and goat cheese.
I stretched the leftovers on Sunday by adding another beet and more goat cheese. With post-workout fuel like this, I might just stick with my goal.
- 1 cup quinoa
- 2 cups water
- 1 beet, washed and boiled until tender, then diced.
- Beet greens separated, washed and roughly chopped
- 1 oz. crumbled goat cheese
- Celtic sea salt
- Cook quinoa according to package instructions. While quinoa is still hot, add beet greens, diced beet and goat cheese. Salt to taste.
