Preheat oven to 325 degrees. Line three baking sheets with parchment paper.
Pour honey into measuring cup and heat in the microwave for 30 seconds to make it easier to work with.
Add maple syrup to honey and stir.
Add cinnamon, vanilla and oil and stir to combine.
Pour oats into large bowl, and mix in liquid mixture. Make sure everything is well combined and that the oats are coated evenly.
Spread oat mixture into a thin layer onto the parchment-lined baking sheets and flatten with spatula.
Bake at 325 for 25 minutes stirring every ten minutes.
Granola will continue to crisp up as it cools. Make sure not to overcook.
Store in an airtight container.
