Healthy Eating Can Be Easy

One of the things that gets me excited about working on my blog is the opportunity to share with you just how easy it can be to eat healthy meals.  I know a lot of you out there are still in the stage of “I want to eat healthy, but I don’t know how to cook,” or “We will start eating healthier when ____.”   I want to encourage you that you CAN start now and that change doesn’t have to be difficult!  The recipes and meal ideas that I want to share with you are simple and quick because that’s what normal busy families need.  When possible, I will show step-by-step instructions for the beginners out there.  Please leave me your feedback and let me know the healthy changes your family is making and how I can help!

As an example of a quick and easy dinner, I want to show you what we ate last night.  I hadn’t gone to the store in a few days, so what we had around was all of the produce from our Bountiful Basket that I picked up yesterday, a few vegetables that I hadn’t used from last week, and some frozen protein choices.  The frozen protein choices that we keep on hand are for nights like last night.  They are healthy, quick and perfect for days when we don’t have a meal planned.  Usually we keep frozen turkey burgers, salmon burgers and salmon fillets on hand.  Sometimes we also have the buffalo burgers from Trader Joe’s.  These are all good options because they don’t have to be thawed to cook (so no planning needed!).  Just make sure that when you buy frozen meat/chicken/fish that you look at the nutrition label and ingredient list.  It is usually best to buy the unseasoned version and add seasoning yourself so you can control the sodium level and ingredients.

So at 5:00, I sliced up some organic carrots and red potatoes, tossed them with olive oil, added a pinch of kosher salt and slid them into a 450 degree oven.  I also cut thick slices of a red onion and put them on the pan to go on our turkey burgers.

Meanwhile, Jeff seasoned the frozen turkey burgers with some garlic salt, cumin and cayenne pepper (no cayenne on the kids burger) and threw them on the grill.  

While I waited for everything to cook, I sliced up a tomato and an avocado.  I also washed a few romaine leaves.  We don’t keep hamburger buns around, so we had our burgers “protein style.”  Not because we are on the Atkins diet, but because we were using what we had.  I also sliced up some strawberries and grapes for dessert.

At 5:30 we all sat down for a healthy, delicious meal.
