After reading Megan Thompson’s guest post on how to make quick pickles, I had to try it for myself. I went with the recipe for spicy quick dill pickles because I had most of the ingredients on hand. I only made one of the jars spicy so that the kids could share in the pickle eating.
The spears turned out nice and mild. We went through these the fastest.
Most of the garlic ended up in the carrot jar for some reason. They were good but very garlicky!
The spicy pepper went into one of the jars with the “chip” pickles. I thought they were perfect. Spicy, but not too hot. The other chip pickles were fresh and mild.
The process really was simple and quick. The only extra step I had to take was to blanch the carrots for two minutes prior to pickling. We will definitely make more pickles in the future experimenting with different recipes and vegetables. I look forward to trying the whiny briny quick pickles next time.
