Whether you are hosting a holiday party or attending one, caprese skewers make for a simple, beautiful and healthy appetizer. Only a few ingredients and no mess, they are the perfect finger-food. Look for mini heirloom tomatoes to make this dish even more colorful.
Caprese Skewers
Ingredients:
-16 oz. mini heirloom tomatoes (can also use grape or cherry tomatoes), rinsed and dried
-1 bunch fresh basil, rinsed and dried
-8 oz. tub of Ciliegine Mozzarella packed in water
-1 T. olive oil
-Salt & Pepper
Directions:
Skewer one basil leaf, one mozzarella ball and one tomato onto each toothpick.
Arrange onto a plate then drizzle with olive oil and sprinkle with salt and pepper.
I put some of these together on Friday night, and after taking the photos, we dug right in. It was a beautiful 75 degree day in Tucson, so we enjoyed our skewers on the back porch. My dad and Jeff sprinkled some Vulcan Salt onto their skewers (of course, they sprinkle Vulcan Salt on almost everything).
Leila thought the skewers looked pretty, so she was excited to try one. Unfortunately, she has a hot and cold relationship with tomatoes, and that day it was cold. Right after I took that third photo, she put her skewer back on the plate for someone else to enjoy.
Joe however loved them. He ate the basil and tomato together in one bite, then ate the mozzarella ball last. He ended up eating three skewers.
