This recipe is simple but impressively delicious. Throw it together with some coconut quinoa and steamed artichokes and you have yourself an impressive dinner!
Preheat oven to 325 degrees. Rub filets with olive oil, salt and pepper.
Brown all sides in a hot pan.
Grab a good bottle of apple butter (homemade is best if you can find it).
Cover the browned lamb in apple butter.
Rub apple butter so that it coats all sides. Roast in oven for 25 minutes (until thermometer reads 140 degrees).
Bring it out and cover with a foil tent. Let sit for 10 minutes before slicing.
Slice and serve! Dad will be so impressed.

Ingredients
- 1 lb. lamb shoulder filet organic grass-fed if possible
- other cuts would work too, cooking time might be different
- 1 Tbsp. olive oil
- 1/2 tsp. each salt & pepper
