I love giving away homemade treats from my kitchen for Christmas, don’t you? I like to make something unique, something that friends may have never tried before. That is what inspired this recipe for Crunchy Quinoa Granola.
While regular granola is made with oats, I try to limit my oat intake because of my celiac disease. I seem to be able to tolerate certified gluten-free oats in small amounts, but eating a giant bowl of oatmeal sends me into a drunken-like stupor. Plus, I’ve tried toasted grain cereal before and have been wanting to try making different versions at home.
This granola is slightly sweet, toasty and has a great crunch. Throw some on a bowl of yogurt, or serve with a splash of milk. You could give it away wrapped up in a pretty jar, or package it as a mix with the printed instructions attached.

Crunchy Quinoa Granola
Ingredients
- 3/4 cup pre-rinsed quinoa
- 1 cup walnut halves
- 1/2 cup unsweetened coconut flakes
- 1/2 tsp. Celtic sea salt
- 2 Tbsp. coconut oil
- 1/4 cup maple syrup
- 1/2 cup unsweetened dried cherries
Instructions
- Preheat the oven to 350 degrees. Combine quinoa, walnut halves, coconut, salt, coconut oil and maple syrup. Spread quinoa mixture into a thin layer on a parchment-lined baking sheet. Bake for 20 minutes, stirring halfway through. Toss with dried cherries and cool. Store in an airtight container.
