Simple Fish Tacos

Last week I promised you the recipe for simple fish tacos Leila requested on her birthday. I make these all the time, and the kids go crazy for them. I think part of the reason is because the fish, while delicious, is also mild in flavor (and not “fishy” at all). The other reason is because Joe and Leila love any kind of meal they get to “dress up” with toppings.

This recipe is super simple, and takes no time to make. You can easily have a healthy gluten-free dinner on the table in under 30 minutes.

Simple Fish Tacos

A delicious, healthy, and gluten-free meal in under 30 minutes!
Prep Time 15 minutes
Cook Time 6 minutes
Total Time 21 minutes
Servings 8

Ingredients
  

  • Juice of 1 lime plus extra limes for serving
  • 3 Tbsp. olive oil divided
  • 3 Tbsp. minced cilantro plus more for serving
  • ¼ tsp. cumin
  • 2 cloves garlic minced
  • 1.5 lb. cod or other white fish
  • Salt to taste
  • For serving:
  • Corn tortillas
  • Cherry tomatoes halved
  • Green onions chopped
  • Cilantro minced
  • Fresh lettuce or arugula
  • Radishes thinly sliced
  • Red cabbage shredded
  • Shredded cheese and whatever else you like!
  • 6- inch flour tortillas

Instructions
 

  • Marinate fish in combination of lime juice, 2 Tbsp. olive oil, cumin and cilantro for 10-15 minutes.
  • Preheat a large pan over medium-high heat. Add 1 Tbsp. olive oil to the pan then cook fish 3 minutes per side (or until fish flakes easily). If your pan is too small, feel free to cut the fish into multiple pieces to cook evenly.
  • Serve with warmed corn tortillas, toppings, and salsa. Let everyone make their own!

    Oh my gosh, I’m rockin’ Leila’s belt! What a fashion statement! I have to admit, at first I thought maybe she was attached to the frig to keep from sliding off the counter!

      The girls has WAY more fashion sense than I do. She can already put her hair up in a ponytail…something I couldn’t do until high school.
