Easiest Chicken Tortilla Soup

The perfect quick and easy meal to warm you up on a cold fall day.  Seriously, this is so easy!  
Easiest Chicken Tortilla Soup with Tortilla Crisps
inspired by Sam the Cooking Guy

Ingredients:
-4 cups fresh salsa
-4 cups low-sodium chicken broth
-1 rotisserie chicken, skin removed, de-boned and coarsely chopped
-1/2 cup fresh cilantro, roughly chopped plus extra for topping
-4 flour tortillas
-2 t. olive oil
-1 t. salt
-1 avocado, sliced
-fat-free greek yogurt for topping (optional)
Directions:
1. Preheat oven to 425 degrees. Stack tortillas and cut into 1/2 inch strips. Toss with olive oil and salt, then spread out onto two baking sheets.  Bake in oven for 8-10 minutes, flipping halfway through.  Don’t forget to set your timer or they will burn!
2. In a pot over medium heat, warm up the salsa.  When salsa is hot, add in the chicken broth and cilantro.  Throw the chicken in the pot and let everything simmer for about five minutes to heat the chicken through.
3. Serve soup in bowls topped with tortilla strips, sliced avocado and a dollop of greek yogurt.

    Yum! And this reminds me of a question: When it come to soups, I love cooking with hominy (ex. http://www.realsimple.com/food-recipes/browse-all-recipes/chicken-posole-00000000020559/index.html), but not sure of the nutritional benefit.
    Is it a good grain? Or are there other grains that will give me more bang for my buck?

    Mmmm. It looks delicious! Soup is the best when the weather is cold (yes – 58 is cold to me). 😉

    I tend to stay away from canned foods as much as I can (I probably won't try this recipe b/c of the broth base). What are your thoughts on that? I'd love to hear where you stand on the topic.

    I agree with you on the cold! Desert life will do that to you.

    For the broth, I always buy the organic, free-range, low-sodium chicken broth in the carton. You can get it at Trader Joe's for less that $2.

    As far as canned foods go, I don't use them much except for beans. Whenever I do buy something that is canned, I always get the lowest sodium version I can find. I also make sure to inspect the ingredient list to make sure I am not getting any unwanted additives.

    Thanks for sharing this! I can't wait to try this- sounds so easy and tasty. I prefer the boxed broth too and think I'll consider adding hominy myself. Yum!
