Cookies? For breakfast? Is that legal? Yes! Each 2-cookie serving contains 7 grams of protein and 5 grams of fiber. You get healthy carbs to fuel your brain through the morning and healthy fat to keep you full. And because you make them yourself and know the ingredients, you avoid ending up with an over-processed breakfast bar or worse yet, no breakfast at all. If you are the type who “doesn’t have time for breakfast”, you have no more excuses. Make a batch of these on Sunday and eat them all week long.
Directions:
1. Preheat oven to 375 degrees. In a large mixing bowl, beat oil and peanut butter until smooth. Add brown sugar, baking soda and salt. Mix until combined, then mix in water, egg and vanilla. Add whole wheat flour and mix until combined. Add oats and mix until combined. Stir in figs and cereal.
2. Line cookie sheets with parchment paper. Use a 1/4 cup measure to drop dough onto cookie sheets. Flatten each cookie slightly with a tap on top. Bake for 10-12 minutes. Let cool on cookie sheet for 10 minutes then transfer to a wire rack to cool completely. Store in an airtight container. Makes 15 servings (2 cookies = 1 serving)

I am so making these today! Would it change the nutritional value a lot if I used coconut oil instead of canola? I like the flavor of coconut oil in baked goods.
Lori, the calories would stay the same but the saturated fat content would increase by 3-4 grams.

Great. These look really good. I have been making my own protein bars and eating those for breakfast but I have gotten a little bored with them so this is a great alternative.

Those look good Elaine! My favorite breakfast cookie recipe comes from the Eat Clean Diet cookbook, but I don't always have the tons of ingredients (lots of different grains) on hand.

Have you experimented with any other cereals in the breakfast cookie? Quite curious as to how they may turn out with others, perhaps Kashi GoLean Crunch? š
Jessica, last time I made them with 1/4 of the cereal being Uncle Sam from Attune Foods (to add fiber). I also added 1/4 cup of Running Man chia seeds and 1 tsp. cinnamon. Didn't get to take any pics before they were all gobbled up! They were even better than the first recipe!
