I hope you had a great week! Ours was filled with fun. We finally made it out to the ballpark to visit Jeff at spring training. We made it out for a day game on Wednesday and a night game on Thursday. The weather was perfect, and we had fun catching up with friends that we missed during the offseason.
Leila started a new ballerina class. It was her favorite part of the week.
One morning I made teddy bear toast that I found on Pinterest. Thank you Pinterest for filling in my creativity gaps.
We had actual weather this week. Rain and everything! We always enjoy a good rain because it’s so rare in these parts.
And true to my word, I got the kids back in the kitchen. One night, Joe made some pancakes for dinner. Notice he’s being extra careful by wearing my onion goggles.
Another night, Joe helped plate up some roasted asparagus. At first he was hesitant to eat some, but then I explained the phenomenon that goes along with asparagus. He’s a boy, he was convinced. In fact, he ate all of his spear so that “it would work better.”
Leila helped me make fruit salad. She is an excellent mixer, and was very proud of her pretty salad.
Wednesday was Jeff’s birthday so we made him a coconut cake. I wanted to be able to eat it too, so I made it gluten-free using this recipe from Bob’s Red Mill. Joe helped by adding ingredients and cracking eggs.
He also helped Grandma make the icing and learned all about a double boiler.
Leila was in charge of sprinkling coconut and placing the candles. She let Joe have the blue ones (notice how they are all nice and organized), and she did the rest. Perfect.
