Whole Foods September Challenge Week 1 – Over the headache hump

Week one of the Whole Foods September Challenge is almost done.  The beginning was rough, especially for Jeff.  He had a solid headache for the first three days.  We haven’t cut out caffeine (we’re still drinking coffee), so the headaches were coming from a lack of processed sugar.  His sweet tooth had finally caught up with him.  I wasn’t off the hook though, I’ve been making plenty of questionable snacking…

Gluten-Free Airline Meals (Oh look, more rice cakes!)

Let’s face it, airline food is not the best.  But when you’re on back-to-back nine hour flights with a sprint through the connecting airport in between, you don’t have much else to rely on.  I wondered what gluten-free airline meals would look like on my trip to Ethiopia and back, and thought you might wonder too.  So I did what I always do, take pictures of my food.  Want to…

September Whole Foods Challenge

So I’ve been feeling a bit…crappy lately.  Not all day every day, but enough that it’s exhausting both mentally and physically.  My stomach’s been upset, my body has been achy, and I have some wicked heartburn right now as I type this. I’ve known for a while that it would be best to do some kind of an elimination diet, but haven’t felt pushed to start it until now.  My…

A Celiac Update

I had another celiac dream last night, but I can’t remember what it was about.  Probably because gluten is still clouding up my brain one year after diagnosis.  That’s right.  One year later, as careful as I’ve been, the lab results say my body is still reacting to gluten.  Don’t ask my doctor about it though because according to her, she has “no idea how to interpret these results.” Awesome.…

RD-to-Be with Celiac Disease: Alex Borsuk’s Story

I’m finishing up the last two days of Celiac Awareness Month with two important guest posts.  Tomorrow, my husband Jeff will be writing about what it’s like to live with me (hmmmmm, do you think he’ll be honest?), but today I have a very special guest for you.  Alex Borsuk is studying to be a dietitian, is a former college athlete and was recently diagnosed with celiac disease.  This combination…

Gluten-Free Baseball

I’ve been to hundreds of baseball games in my life.  Maybe even more than that. Thousands.  Sometimes it feels like millions.  I absolutely love baseball.  I always have.  Lucky for me, I married a man who was born to play and coach the game.  One thing I’ve learned over the years is that it always pays to bring your own snacks. While there is something to be said about enjoying…

I may not eat your food, but will you please still invite me to dinner?

This month, I’ve been doing a lot of education about the perils of eating away from home for those with celiac disease. I’ve talked about restaurants that claim to have gluten-free food but end up having multiple cross-contamination issues. I told you about how I had to get brand new pots and pans for my kitchen, a new toaster, new wooden spoons, and new colanders just to be safe in…
