Joy in Black and White

On a small boat, in the middle of Lake Zeway in Ethiopia, my friend Daniel caught me in a moment of joy. I had no idea he had taken this photo until well after we were home.  It’s quickly become one of my favorites and one that I look at when I’m having a bad day like today. Since posting about our success in week one of the whole foods…

Whole Foods September Challenge Week 1 – Over the headache hump

Week one of the Whole Foods September Challenge is almost done.  The beginning was rough, especially for Jeff.  He had a solid headache for the first three days.  We haven’t cut out caffeine (we’re still drinking coffee), so the headaches were coming from a lack of processed sugar.  His sweet tooth had finally caught up with him.  I wasn’t off the hook though, I’ve been making plenty of questionable snacking…

Gluten-Free Airline Meals (Oh look, more rice cakes!)

Let’s face it, airline food is not the best.  But when you’re on back-to-back nine hour flights with a sprint through the connecting airport in between, you don’t have much else to rely on.  I wondered what gluten-free airline meals would look like on my trip to Ethiopia and back, and thought you might wonder too.  So I did what I always do, take pictures of my food.  Want to…

Roasted Tomatillo Salsa

Happy College Football Kickoff Day!  Who are you rooting for (or do you even care)?  I was born and bred an Oklahoma Sooner.  In fact, I’m pretty sure some of my first words were “Boomer Sooner”.  Growing up in Kansas surrounded by Jayhawks and Wildcats was a little tough, but I always wore my crimson & cream with pride. When I was a freshman at the University of Oklahoma, our…

September Whole Foods Challenge

So I’ve been feeling a bit…crappy lately.  Not all day every day, but enough that it’s exhausting both mentally and physically.  My stomach’s been upset, my body has been achy, and I have some wicked heartburn right now as I type this. I’ve known for a while that it would be best to do some kind of an elimination diet, but haven’t felt pushed to start it until now.  My…

Quick & Easy Meal Idea

Thank you for all of your helpful and supportive comments yesterday.  I appreciate every single word.  Many of you had ideas that I’ve never considered about what might be causing my antibody levels to remain high.  So thank you for brainstorming this issue with me! As I mentioned, Jeff and I will be doing a whole food challenge in September.  Basically, this means that we won’t be eating anything that…

A Celiac Update

I had another celiac dream last night, but I can’t remember what it was about.  Probably because gluten is still clouding up my brain one year after diagnosis.  That’s right.  One year later, as careful as I’ve been, the lab results say my body is still reacting to gluten.  Don’t ask my doctor about it though because according to her, she has “no idea how to interpret these results.” Awesome.…
