Simple Fish Tacos

Last week I promised you the recipe for simple fish tacos Leila requested on her birthday. I make these all the time, and the kids go crazy for them. I think part of the reason is because the fish, while delicious, is also mild in flavor (and not “fishy” at all). The other reason is because Joe and Leila love any kind of meal they get to “dress up” with…

Arugula Bean Dip

Yesterday we celebrated Leila’s 5th birthday with fish tacos and strawberry vanilla cake. She loved the fish tacos, but she may have been even more excited about the cake. It turned out even better than I remembered, and I may have had another piece for breakfast this morning. You can find the recipe for the cake here, and I’ll be posting the fish taco recipe next week. While I was…

Nourish Bowls

I drool every time I see McKel of Nutrition Stripped post a photo of her daily Nourish Bowl, so this week I finally made one of my own. I ate one last night for dinner, then I had the one pictured for lunch. I may eat this every day for the rest of my life. What I love about the Nourish Bowl concept is that it takes very little prep…

Asian Tuna Salad (No Mayo!)

It has been 24 hours since prepping my little heart out, and I am like a kid in a candy store. What salad should I eat first? How about a nibble or two from the sliced veggie box? Maybe a chicken sandwich? It’s like my kitchen has been transformed into a restaurant take-away cooler. It’s so fun! Today for lunch I decided on the Asian Tuna Salad. Served up in lettuce…

Olive & Garbanzo Bean Tapenade with Endive

It’s almost Superbowl time, and you know what that means: Snacks and Commercials! I don’t know about you, but I’m hoping for more ingenuity and a lot less shock value this year.  (I’m looking at you, GoDaddy). If you’re short on time, but still want to impress your friends with a stunning appetizer, this tapenade with endive will do it.  It takes only a few minutes to whip up, and…

Coconut Chicken Chili

What a week! My beloved Sooners won the Sugar Bowl, my sorry KC Chiefs choked in the playoffs (again), and Jeff and I celebrated our 12th wedding anniversary. Oh, and I made my first batch of coconut chicken chili. Friends, this is good. So good.  Serve over rice or quinoa with a sprinkle of cilantro (or basil if you’re a cilantro-hater), peanuts, and a squirt of Sriracha. I promise, you’re…

Butternut Squash Gluten-Free Pizza

I’ve been going back through some older recipes from my pre-celiac or “PC days” as Gluten Dude would say and making them over to be gluten-free and dairy-free friendly.  One of my favorites that I used to make all the time was a butternut squash pizza.  I would get the fresh pizza dough from Trader Joe’s or make my own focaccia and throw it together on family pizza night. I’ve…
