Yogurt-Lemon Chicken Recipe

How often do you cook and eat meals at home as a family?  Once a week?  More?  Many people I talk to are under the impression that healthy dinners take way too much time to put together and that grabbing fast food or a microwavable meal is just part of a busy family’s life.  If that describes your mindset, I want to challenge you to a new way of thinking.  Start with this recipe.  Make it and tell me what you think.
Toss all of the ingredients into a ziploc bag.
Close the bag, mash the mixture around with your hands to get the ingredients evenly distributed (this part is fun for the kids).  Place the bag onto a cookie sheet and put in the refrigerator to marinate.  You can put this together in the morning and let it marinate all day, or you can throw it in, take the kids to the park and come home and cook it.
You can cook the chicken in a few different ways.  You can bake it, skewer and grill it, or cook it on the stove.  I heated a large pan on the stove and cooked the chicken 4-5 minutes per side, until cooked through.
To serve, sprinkle chicken with cilantro and green onions.  Don’t forget to add extra colors to your plate with colorful sides.
If you have any leftover chicken, it goes great on top of a green salad for lunch the next day.

Yogurt-Lemon Chicken

Ingredients
  

  • 1 lb. chicken breast tenderloins
  • 1/2 cup plain non-fat greek yogurt
  • 2 tsp. lemon zest
  • Juice of 1 lemon
  • 1 garlic clove minced
  • 1/2 tsp. ground cumin
  • 1/2 tsp. red pepper flakes optional
  • 1/2 tsp. ground turmeric
  • 1/2 tsp. ground black pepper
  • 1/2 tsp. sea salt
  • 1/2 cup cilantro chopped
  • 1/2 cup green onions chopped

Instructions

    This looks wonderful! I love the idea of cooking with yogurt, but I usually am scared to. Not sure why? Anyway, this recipe looks simple and delicious. It's going on our menu planner for next week! Thank you!
