One week of school is in the books, and I’m still alive. Turns out waking up early isn’t so hard if you make it to bed on time. (I know, duh.)
Joe and I have about 20 minutes for breakfast, so I’m getting back into the mode of making something quick and filling. Quick so we don’t have to cram it down our throats in 2 minutes, and filling so that Joe doesn’t get too hungry before snack time.
The trick to a filling breakfast is to make sure there is some protein and fat to go along with your carbs. That means cereal isn’t going to cut it. Here are 5 ideas for a quick and filling breakfast:
The Oatmeal Pancake is my most popular recipe for a reason. It’s quick, easy, and with a smear of peanut butter, it keeps you full all morning.
Get these Overnight Oats prepared the night before, give them a quick reheat in the morning and toss in a sliced banana. Perfect!
There’s nothing faster than a smoothie in the morning (although the blender might wake up other sleepyheads in the house). A combo of fruit, veggies, milk and nut butter make for a filling and tasty breakfast!
Cook up a frittata for dinner and have the leftovers for breakfast! Serve with fruit, and you will be on your way in no time.
For a healthy grab-n-go option, make a batch of breakfast cookies or Raisin Nut Bites. Make enough to enjoy them all week long!

Great options – I haven’t made those nut bite things in awhile and need to. – I can’t get over that you kiddos are already in school – we still have a month to go here on the East Coast.
I make individual egg muffins in a muffin pan. Whatever ingredients I have in the fridge (bacon,sausage, spinach, cheese etc.) mixed with egg. Bake in the oven and pop them out of the muffin pan and freeze them. A couple of minutes in the microwave and you’re ready to go! I cannot wait to try the raisin nut bites!
Love the Oatmeal Pancake idea. Will definitely be giving that a try! In my home, we’re a big fan of mini frittata cups, like this one: http://smarteatingforkids.com/sefk/mini-broccoli-frittatas-with-turkey-bacon/. They are filling and a great way to add a teensy bit of veggies to breakfast.
This may sound weird but… I LOVE sauteed squid for breakfast, LOL! It’s so delicious, but obviously NOT the typical breakfast food!

I had to tell you how big of a hit the Oatmeal Pancake has been in my house since we started preschool!! My little one calls it this an oatmeal “cookie” pancake. I mix in the maple syrup and add some raisins before cooking. I usually make silver dollar sized pancakes and they are perfect for those mornings when we have to eat on the go. Half of the recipe is enough to keep me full from breakfast until lunch without snacking! Serioously, it helps set the tone for the day and I noticed I am less likely to snack all day when I start off with an oatmeal pancake.
