Pear & Pomegranate Salad

I put this salad together the other night with some of the organic ingredients from my Bountiful Basket.  The combination of flavors was outstanding, and Jeff and I gobbled it up!  I call it a Christmas salad because of the beautiful red and green colors, but this would be a delicious salad any time of the year. Our First Clementine

Today we picked our first clementine from the tree.  Four years ago, when our dog Hobbs was a puppy, he chewed the tree down to a nub.  I didn’t think we would ever see a clementine.   But here it stands, our beautiful tree bursting with fruit.   When we couldn’t stand it any longer, we picked one.  Joe peeled it very carefully. Flavorful Salad Idea
