Spring Favorite – Roasted Asparagus

Spring is just around the corner, and you know what that means.  Fresh asparagus!  Asparagus is an excellent source of vitamin K, folate, vitamin C and vitamin A.  It can be prepared many ways and enjoyed hot or cold.  My favorite way is also the simplest.
Roasted Asparagus
-1 lb. bunch asparagus
-1 Tbsp. olive oil
-1/2 tsp. sea salt
Preheat oven to 450 degrees. Wash asparagus and trim off tough ends. The easiest way to do this is to bend the asparagus until it breaks.  Break one, then trim the rest to match that size. Toss asparagus with olive oil and lay out on a baking sheet in a single layer. Sprinkle with sea salt and roast for 15 minutes. Serve immediately.
What is your favorite part of spring?

My fav part of spring is when it first starts changing. When 50 degrees feels like 80!

LOVE asparagus on the grill. Had about 10 stalks the other night-yum! Strawberries are another spring favorite of mine, although they usually appear in late winter here in San Diego.

This is one of our families favorite way to enjoy Asparagus. We also sprinkle some Parmigiana cheese on top when it comes out of the oven for some extra flavor. Check out my Bountiful Basket Blog at http://www.4peatssake.wordpress.com

Allison, I hardly remember what that feels like after living in the desert for so long šŸ™‚

EA, grilled asparagus is awesome too.

Homemom, I hope you enjoy it!

Callie, thanks for the comment. I like to sprinkle parmesan on roasted broccoli.
