I’ve never been a big sandwich person. Not that I don’t enjoy a good sandwich, but I don’t want to eat one every day. And salads are great, but they can get old after a while too. Every once in a while, I just want a good snack plate for lunch. Fresh veggies, fresh fruit, a little cheese, some nuts and crackers, and I’m good to go.
I like to make my snack plate pretty by adding lots of color and using a fun plate. This one features sliced zucchini and red bell pepper, strawberries, apricots with goat cheese and pecans, sesame gluten-free crackers, hummus and almond-stuffed green olives.

I got so excited about your photos that I forgot to add my own snack plate… Sharp cheddar or pepper jack cheese, olives stuffed with jalapenos, TLC crackers from Trader Joe's, dill or bread & butter pickles, pickled jalapenos, homemade hummus, berries (assorted), red & orange bell peppers.

i love this idea! i saw it somewhere last year and it's been inspiring some snack plate lunches for me since then. i love it because it's an easy way to get a little bit of everything!

Oh wow, those look so pretty! I love it when healthy eating feels like a treat. I don’t have a snack plate to share, but I’m definitely bookmarking these ones. Back to work tomorrow after a year on mat leave – so I’m looking for healthy work lunches & munches!
