T-Ball and Taco Night

Last night was Joe’s very first t-ball practice.

I might have taken 92 pictures to remember the occasion…

Leila runningLast night was also my first experience with what to eat on a practice night.  T-ball started at 5:30, so I made the kids a banana, strawberry, mango, coconut milk smoothie to drink on the way.  Before we left, I cooked up a pan of organic ground beef with tomatoes then stuck it in the fridge.  When we all arrived home, hungry and tired, I was able to pull out the meat and other taco fixings and make dinner in about 10 minutes.

I know that last night was just the beginning of sports practices and game nights that will require creativity to get a healthy meal on the table.  I would love to hear your ideas.

What does your family eat on practice/game nights?

Do you go camera-crazy like me when your kids start something new?

    We do a lot of crock pot and breakfast for dinner on busy nights.

    Nothing like an omelette for a quick, healthy dinner. 🙂

    I’ve also been known to put together a casserole or some such at lunch time we can re-heat after practice, serve dinner at 4pm, make double the night before so we can just do left overs, and when all else fails, pick up a rotisserie chicken on the way home.

      Becky, we have breakfast for dinner often on busy nights (especially if I don’t remember to get the crockpot going on time).

    Breakfast for dinner, sandwiches (not so easy now, I know), and crock pot dinners like Becky said. Maybe make chicken for tacos?

      Becca, I think that making a big batch of shredded chicken, pork or beef to keep in the freezer is a great idea for quick tacos!

    Frittata: Eggs, grated potato, leftover vegs or meat. Heat an iron skillet, sprinkle your meat and vegs, pour eggs over it, sprinkle w/ cheese. Pop it in the oven in the afternoon to bake for 50 minutes. Cover it and then when you return home from practice, cut it into squares and serve with fruit and toast. It stays warm and is super yum!

    That smoothie sounds delish! I love the idea of adding coconut milk – so tropical!

      Jesse, I am currently dairy-free, so the coconut milk works well. It doesn’t have the coconut flavor like the canned milk does, but I like the consistency better than almond milk.

    We mealplan one week at a time around BB. Keeping in mind what days I need simply throw together meals and days when prep ahead is needed. We try to include the kids in the prep amap but life happens. I also make sure that when we can, we freeze leftover chicken or beef for quick wraps (good on the go) or tacos. I also make egg rolls both asian and mexican or burritos and freeze them for quick heat grab and go dinners. Also make a batch of Taco Soup in the crockpot and freeze portions(I make mine veg since I dont eat meat). Then pull it out for eating with homemade chips, taco shells, wraps, or veggies like a dip. We also keed red sauce and pizza toppings on hand, you can make anything into a pizza…
