Successful Weekly Food Prep

Last month I introduced you to Lindsay (aka The Lean Green Bean) who gave us 5 tips for a successful food prep session. Today I finally tried it for myself.

I think I’ve been putting off trying a weekly food prep because THREE HOURS IN THE KITCHEN, but today felt like a good day to stop making excuses.

With the Grateful Dead cranked up for inspiration, I go to work. As I chop veggies, they started singing about Tennessee. A smile crosses my face as I think about all the people I love in Nashville. (Seriously, how do so many nice people live in Nashville?) I make a mental note to get out there someday soon.

After a few minutes Leila jumps up on her Cookie Monster chair and asks to help. She measures out raisins, almonds and sesame seeds before gleefully pulsing them in the food processor.

Time passes faster than anticipated and at the end of the day I have a fridge full of healthy food. I’m so happy about it that I don’t even mind doing the dishes.

Here’s what I made:

I’m excited to start this week on track. Now when I’m tired at the end of the day, most of my food prep will already be done. And when I’m rushing around at lunchtime, I can grab a healthy salad instead of a processed snack.

Thank you Lindsey for the inspiration. I’m hoping to make this a habit!

    I just started doing a weekly food prep earlier this year and I love it, too! It’s been a life-saver with coming home from work (I usually don’t get in until 5:45) and getting dinner on the table, stat. I’m excited to branch out to doing more prep as I get the hang of it.
