Spring Favorite – Roasted Asparagus

Spring is just around the corner, and you know what that means.  Fresh asparagus!  Asparagus is an excellent source of vitamin K, folate, vitamin C and vitamin A.  It can be prepared many ways and enjoyed hot or cold.  My favorite way is also the simplest.  
Roasted Asparagus
Ingredients:
-1 lb. bunch asparagus
-1 Tbsp. olive oil
-1/2 tsp. sea salt
Directions:
Preheat oven to 450 degrees. Wash asparagus and trim off tough ends. The easiest way to do this is to bend the asparagus until it breaks.  Break one, then trim the rest to match that size. Toss asparagus with olive oil and lay out on a baking sheet in a single layer. Sprinkle with sea salt and roast for 15 minutes. Serve immediately.

    Um… you read my mind!! I have always sauteed asparagus, but was just talking to my friend about roasting them tomorrow night!!

    My fav part of spring is when it first starts changing. When 50 degrees feels like 80!

    LOVE asparagus on the grill. Had about 10 stalks the other night-yum! Strawberries are another spring favorite of mine, although they usually appear in late winter here in San Diego.
