Chicken Curry in a Hurry

I don’t know why, but I always seem to forget about how quick and easy it is to make a pot of chicken curry.  Or shrimp curry.  Or whatever-you-want-to-throw-in-the-pot curry.  This is something I should make more often because not only is it quick and versatile, but my family gobbles it up every time. All you need is a can of coconut milk, a jar of green curry paste, chicken…

Strawberry Kale Smoothie

Lately we’ve been soaking up as much of our beautiful Arizona spring weather as possible. I spend the early morning reading on the porch, covered in a thick blanket, sipping hot coffee. The kids spend early afternoons in the shade coloring and playing. But already by late afternoon, the temperature in the house is creeping up to a toasty 85 degrees. The heat in the house has started to put…

Mamavation Campaign 16 Starts Today!

Today is the launch of Mamavation Campaign 16!  Three moms will be announced tonight via Twitter, and I can’t wait to start working with them.  The average Mamavation Mom loses over 20 pounds during the 7-week campaign.  I love working with these women because they are motivated to be the healthy change for their family.  This isn’t a diet, this is truly a lifestyle change.  Here are a few quotes…

This morning, before the sun came up, I headed out to the other side of town to pay a visit to our local CBS morning news.  Because it’s National Read Your Nutrition Labels Day (yes, it’s a real thing), we talked about debunking some of the claims on the front of food packages. Low Sugar: Before reaching for that low sugar item, take a peek at the ingredient list.  Are…

I’ve been trying to figure out how to get back into an exercise routine.  What should it look like?  What kind of workouts should I start with?  Should I unfreeze my gym membership, and how often should I go?  Should I workout in the morning or afternoon?  Should I train for a race?  How should I start? Gah. Too many questions. Then I realized the answer is a simple one.…

A quick health update…

So many of you passed along your prayers and positive thoughts today (thank you) that I didn’t want to leave you hanging.  I saw my GI doctor this morning at 8:30 (and got to hug Erica at 8:20 in the lobby). She explained that my celiac disease had pretty much resolved and that my gut looked healthy during my last scope.  She feels like the issues I’m currently experiencing might…

Searching for answers…

This week has been rough.  My brain has been so cloudy that I’ve struggled to have coherent conversations and to be fully present as a parent, wife and friend.  Having to work so hard at these things leaves me utterly exhausted.  Emotionally and mentally drained. I’m driving back up to the Mayo Clinic this morning for the follow up with my GI doctor. Still searching for answers… I’ll keep you…
