When I met Michelle Dudash a few months ago, not only was she the cutest little mama I ever did see, but her passion for food was instantly apparent. She has a way of taking the seemingly overwhelming chore of getting healthy meals on the table that everyone in the family will actually eat, and turning it into a quick and simple task that anyone can master.
Her new cookbook “Clean Eating for Busy Families” is packed with simple whole-food recipes, along with the tips, grocery lists and tools to get started.
This isn’t a gluten-free cookbook, but most of the recipes can be modified with just a quick substitution or two. One of my favorite recipes is included here. I thought Grilled Cilantro Shrimp Tacos would be the perfect clean eating dish for summer. Yum!

Grilled Cilantro Shrimp Tacos
Ingredients
- For shrimp:
- 1 pound 455 g peeled and deveined large shrimp (21/25 count), tails removed
- ¼ cup 4 g chopped cilantro
- 2 tablespoons 28 ml lime juice
- 1 tablespoon 15 ml expeller-pressed grapeseed or canola oil
- 2 teaspoons 6 g minced garlic
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 6 long grill skewers if using wooden skewers, presoak in water 10 minutes
- For salsa:
- 1 mango diced (about 1 cup, or 175 g)
- ¾ cup 113 g chopped red bell pepper
- 2 tablespoons 2 g chopped cilantro
- 2 tablespoons 13 g thinly sliced scallions
- 2 teaspoons 10 ml lime juice
- ½ teaspoon minced garlic
- ½ teaspoon minced jalapeno add more to make it spicier
- ¼ teaspoon ground cumin
- 1/ 8 teaspoon chili powder
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 8 corn or small whole-grain flour tortillas make sure to use gluten-free corn tortillas if you are gluten-free
- Extra-virgin olive oil for drizzling
Instructions
- To make the shrimp: Preheat grill on medium-high heat (400°F, 200°C, or gas mark 6). In a medium bowl, mix shrimp with cilantro, lime juice, oil, garlic, salt, and pepper. Stand 2 skewers up on the counter, ½ inch (1.3 cm) apart with sharp sides pointing up, and thread on the shrimp, pushing them all the way down to 1 inch (2.5 cm) from base of skewers.
- Repeat until all the shrimp are skewered, being careful to leave small spaces between each. Place shrimp skewers on a sheet pan, cover with plastic wrap, and chill to marinate at least 15 minutes, or up to 4 hours.
- To make the salsa: Stir together mango, bell pepper, cilantro, scallions, lime juice, garlic, jalapeno, cumin, chili powder, salt, and pepper.
- Oil the grill and place shrimp on the grate. Close the lid and cook for 3 to 4 minutes until shrimp are opaque almost halfway through. Turn skewers over to cook the shrimp through, another 2 to 3 minutes. Remove shrimp from skewers. Heat tortillas on the grill or in a microwave until hot, about 30 seconds.
- Fill tortillas with shrimp and salsa and drizzle with oil.

biggest challenge is food shopping. I need to start planning more and get everything I need for clean eating all week
My biggest obstacle is not having a large amount of time between getting home from work and getting dinner on the table. I need meals that don’t need a ton of prep work and cook time. 🙂
I have a picky teenager and limited dinner prep time. But we are committed to healthy eating, so this cookbook would be a great addition to my kitchen.
Biggest challenge is feeling just plain lazy! Or having a craving for something other than what I’ve planned for dinner.
Shopping and planning ahead. Now we have a CSA box coming every Thursday, which helps, but it’s still a challenge to shop for CSA accompaniments.
My biggest challenge is my completely random schedule as I’m still in school so I’m usually thinking about dinner at 8 o’ clock at night.
My biggest challenge is my work schedule. I am also an RD and I work both on a college campus (day job) and private practice (night job). It’s tough getting home late when you have a 2 year old. My struggle is I need his meals ready in advance because often eating when I get home is just too late for him.

My biggest obstacle for eating clean for my family is TIME MANAGEMENT, BUDGET, and KID FRIENDLY 😉
Biggest challenge for me is getting everyone to agree on certain ingredients or ingredient swaps for healthier eating as well as getting them to try new things because they can be a little skeptical!

Hmmm….working full-time, picky eaters who don’t care for the things the other likes, dance/soccer until 7!!! Where do I begin!
My biggest challenge is affording to eat the way I want. We are on a tight budget, and I can’t believe how cheap bad food is. And how expensive good real food is.
Luckily it is almost summer, so there is fresh good food readily available and reasonably priced. Especially if we eat it from our own garden…but then if Mama has spent the day busting her hump in the heat in the garden, the last thing I want to do is fire up the oven and make dinner!

My biggest obstacle to getting healthy food on the table is money. We are a one income family and buying healthy foods is expensive! I find the best deals that I can and I always make healthy food a top priority in our house (no chips, sodas, etc) but I would love to figure out more ways to eat healthy and save money at the same time. Having a garden this summer will definitely help!
I don’t have kids, but I usually make whatever I’m eating on Sunday, and eat for a few days (If I’m sick of what I’ve made, it goes in the freezer, and something else comes out). It’s the only way I can eat healthfully – I don’t want to cook when I’ve worked 9 hours and gone to the gym. I suspect I’ll be the same way if and when I’m a mom.
As a side note, my own mom must be super woman. She made a meal (some more complicated than others) basically every night when I was growing up. While working more than full time and volunteering. I really don’t know how she did it all those years!

I feel like time is my biggest obstacle to eating fresh. We don’t get home until 6 and the kids typically need to be in bed by 7:30, so time to cook, eat, and bathe them just isn’t there.
