Quinoa with Beets and Goat Cheese

Spring Training is over, shorts season is here, and I am not 20 years old anymore. Therefore, it’s time to start working out again.

I don’t have much of a plan except to do something every day. Whether it’s a DVD, a jog around the neighborhood or quick circuit in the living room, I am going to do something.

Because something is always better than nothing.

And I was getting way too good at doing nothing.

Ahem.

On Saturday I popped in my 30-Day Shred DVD and laced up my shoes. Before letting Jillian yell at me through the screen, I put on a pot of boiling water for beets and another pot on for quinoa. By the time I was jelly-legged and red-faced, my lunch was almost finished. I tossed one of the golden beets with quinoa, beet greens and goat cheese.

Quick Quinoa with Beets and Goat Cheese

YUM.

I stretched the leftovers on Sunday by adding another beet and more goat cheese. With post-workout fuel like this, I might just stick with my goal.

Quick Quinoa with Beets and Goat Cheese

Ingredients
  

  • 1 cup quinoa
  • 2 cups water
  • 1 beet washed and boiled until tender, then diced.
  • Beet greens separated washed and roughly chopped
  • 1 oz. crumbled goat cheese
  • Celtic sea salt

Instructions
 

  • Cook quinoa according to package instructions. While quinoa is still hot, add beet greens, diced beet and goat cheese. Salt to taste.

    eek! I love Jillian Michael’s work out dvds. Your lunch afterwards sounds really delicious, I’ll have to make that soon. My favorite way to work out lately has been adding strength training to my routine. I’m running /training for a half marathon and I dance 3 nights a week with a competitive team, but I’ve noticed the strength training change my body and help me get stronger in those two areas. I do the Lean & Lovely program, I LOVE it!
