A minor setback, and a clean kitchen

Last weekend was a busy one. We had friends visiting, lots of swimming, and a few meals eaten away from home.  While I was careful to specify my diet restrictions to the restaurant staff, I still managed to get sick.  I ended up with a bloated tummy, fatigue and other symptoms that I had managed to keep away for the first two weeks of my celiac adventure.  Last night I…

My first gluten-free baking attempt

One of the first things that people ask me when I first tell them that I’ve been diagnosed with Celiac Disease is, “So that means you can’t have any bread, right?”  While it’s true that I can’t have any wheat bread, that doesn’t mean that I have to give up bread forever. After picking up a few loaves of gluten-free bread at the grocery store (and quickly putting them back…

Snack Plate Lunch

I’ve never been a big sandwich person.  Not that I don’t enjoy a good sandwich, but I don’t want to eat one every day.  And salads are great, but they can get old after a while too.  Every once in a while, I just want a good snack plate for lunch.  Fresh veggies, fresh fruit, a little cheese, some nuts and crackers, and I’m good to go. It’s Official – I have Celiac Disease

The doctor called today with the results of my biopsy.  I have been officially diagnosed with Celiac Disease. After sharing the news with my family, I put it out on Twitter.  People seemed to be torn between saying “Congratulations!” and saying “I’m sorry.”  Let me just say that there is no reason to feel bad.  This is a time to celebrate!  I have already gone almost a week eating gluten-free…

Chicken & Sweet Onion Crockpot Dinner

Yesterday was busy.  Lots of painting going on. And lacing. And potty training. Don’t worry, I didn’t take pictures of that. With all of our projects going on, and my pledge to get back to the gym, I needed something easy for dinner.  I don’t know why, but I have never used my crockpot to it’s full potential.  I think it’s because when I first started cooking, the only crockpot…

Dressed for Success

I always know it’s been a good week when the laundry basket is full of workout clothes.  Since I own my favorite Nike Tempo running shorts in almost every color, the more colorful the basket the better.  Unfortunately, with my tummy troubles and recent exhaustion, the only workout clothes finding their way into the laundry room were a pair of leggings and a comfy Underarmour tank top.  I wore them…

Going Gluten-Free: Where do I start?

Yesterday morning I had my upper endoscopy.  Although the procedure itself is pretty easy on the body, the anaesthesia medication knocked me out all day.  I have absolutely no memory of getting dressed, getting in the car, drinking a milkshake and getting into bed.  Apparently I was chatting with the doctor and giving goofy grins to my friends and family until I passed out at home.  I spent most of the…
