My last few posts have focused on some of the difficulties that come with having celiac disease. Today I thought it would be a good idea to turn my attention to the delicious side of gluten-free eating. You already know that I enjoy cooking for my family, and now that my kitchen is safely free of gluten, I can keep the tasty meals coming. The switch to gluten-free cooking hasn’t…
One of my favorite things about Instagram is following other foodies. It’s nice to know that I’m not the only crazy person who takes pictures of what I’m eating. Last week, the talented Jenny of Picky Palate shared a photo of a strawberry, goat cheese, and pecan salad she was about to eat at a restaurant. I had some goat cheese chilling in my fridge, so with inspiration from Jenny,…
All day today, I had planned to roast a bunch of veggies for dinner to toss with either quinoa or millet for Meatless Monday. As the day went on, I just couldn’t make myself turn on the oven. See the entire list of recipes at the end of this post. This month’s theme is grilling which put me into a bit of a panic. Since our move, our outdoor grill has been non-functional without a gas hookup. Thankfully, we have our trusty George…
I put this salad together the other night with some of the organic ingredients from my Bountiful Basket. The combination of flavors was outstanding, and Jeff and I gobbled it up! I call it a Christmas salad because of the beautiful red and green colors, but this would be a delicious salad any time of the year. A festive salad for any occasion! A festive salad for a festive season!
