Adventures with squash blossoms

This morning, we took a trip to the Gilbert Farmers’ Market.  We picked up a colorful array of local produce, and something new that we’ve never tried before. Our haul included chile peppers, sweet potatoes, green tomatoes, heirloom cherry tomatoes, onions, a shallot, garlic, sunflower shoots, peaches, golden beets, squash blossoms, armenian cucumbers, and rainbow carrots.  Before we talk about the squash blossoms, let me hit on my plans for…

Like Kale Chips? Try Collard Chips!

Have you ever had collard greens before?  Until recently, my only experience with collards had been Southern style, swimming in bacon, served next to a giant pan of mac ‘n cheese.  When Jeff and I were first married, we spent 2 baseball seasons living in Birmingham, Alabama.  He played for the Birmingham Barons, and I put my dietetics degree to use by working at a golf course and selling beer…

Grain-Free “Fried Rice” with Walnuts

grain free fried rice with walnuts

Last week, the California Walnut people asked me if I would like a bag of their walnuts.  Free walnuts?  Yes please! A few days later, I had a big bag of fresh walnuts, hand-packed and tied up in a cute little burlap bag. For breakfast, I tossed together some vanilla So Delicious coconut yogurt with fresh strawberries and walnuts. It was a delicious way to start the day, and the…
